Paleo Chocolate recipe that will knock your socks off, new and improved
2 85% dark chocolate bars (highly recommend AlterEco Blackout bar 2.82 oz.)
1/2 cup plus 2 T. coconut oil
1/2 T. cocoa powder
3 to 4 T. whipping cream
1/2 tsp. vanilla
2 T. plus 1 t. honey
1 T tapioca syrup (if can't find it, substitute more honey or one of the other sweeteners)
3 drops liquid stevia
Melt coconut oil and chocolate bar in microwave in a glass measuring cup at half power, stirring at intervals, until smooth.
Add in cocoa, cream, and vanilla and stir.
Add sweeteners and stir. (adjust sweeteners to taste)
Pour mixture onto a flat baking sheet or plate covered with wax paper. Spread evenly.
Sprinkle with sea salt.
Refrigerate for 20 minutes.
Slice into pieces with a pizza cutter. Store in refrigerator.

The answer to that varies depending on who you ask, but as far as the Paleo Scoop is concerned, Paleo is just a way of eating and living which is based on what our bodies are best adapted to and which maximizes the probability of good health. The basics:
EAT nourishing, nutrient dense food:
meat (organic and free range is best), seafood, vegetables, eggs, nuts, fruits, fat (such as ghee, coconut oil, beef tallow, duck fat, olive oil), as much or as little safe starch as works for you (potatoes, sweet potatoes, rice, etc.) as much or as little full fat dairy as works for you (butter, cheese, cream, yogurt, sour cream) and dark chocolate of course.
AVOID food that is harmful :
industrial seed and vegetable oils (such as soybean, canola, corn, safflower, peanut oils),
gluten and most grains
highly processed foods
improperly prepared legumes
